We are engaged in sake brewing by scrutinizing raw materials with rice farmers in Nagano Prefecture, valuing the blessings of Saku's nature brought about by the cold climate, clear water (subsoil water of the Chikuma River in the Yatsugatake Mountains), and microorganisms (saccharification of koji mold). .
