"Niigata Rice Shinnosuke" is used for rice koji, and it is made with two types of koji.
It is a sweet sake that is smooth and comfortable to drink, characterized by just the right amount of sweetness and deliciousness that you won't get tired of.

[Manufacturer] Minemura Brewery in Niigata City, Niigata Prefecture

Minemura Jozo was founded in 1903 in the Nuttari district of Niigata City, Niigata Prefecture by Nakazo Minemura, the first generation, as a miso maker. A long-established brewery that has been making koji for 115 years.

At the time of the brewery's founding, the Kurinoki River flowed in front of the brewery, making it convenient for the transportation of raw materials. It was popular as a town of fermentation with breweries.

The only amazake in Japan made with two types of koji

Minemura Jozo's Amazake is a koji that is good at breaking down rice into sugar, which is used in sake brewing, and a koji that is good at breaking down soybeans into amino acids, which is used in making miso. It is made using two koji.

Originally, I made a living by brewing miso, so when I first made amazake using the koji used to make miso, it turned out to be amazake with too strong a taste that made my throat irritate. When I used the koji from the sake brewery, it had a beautiful taste with a sweet taste, but that didn't make it unique, so I tried mixing the two types of koji in various formulations.

I used Shinnosuke for rice koji. Shinnosuke is less sticky than Koshihikari, so it is easy to make koji, and we were able to make good quality koji.
Minemura Brewery's amazake, which is easy to drink with sweet taste and yet has a umami flavor, was born.
Please try amazake, which was born precisely because of the Nuttari area where various breweries gather.

Staff Recommendations <br>Although it is a new product, it is highly popular with the staff. It has a moderate sweetness that you won't get tired of, so it is recommended for beginners and those who often drink amazake. The discreet yet reliable label design is also recommended for gifts.
