    Minemura Jozo was founded in 1903 in the Nuttari area of ​​Niigata City, Niigata Prefecture by Nakazo Minemura, the first generation, as a miso maker. A long-established brewery that has been making koji for 115 years.

    At the time of the brewery's founding, the Kurinoki River flowed in front of the brewery, making it convenient for the transportation of raw materials. It was popular as a town of fermentation with breweries.

    Minemura Jozo's amazake is a koji that is good at breaking down rice into sugar, which is used in sake brewing, and a koji that is good at breaking down soybeans into amino acids, which is used in making miso. It is made using two koji.

    Originally, I made a living by brewing miso, so when I first made amazake using the koji used to make miso, it turned out to be amazake with too strong a taste that made my throat irritate. When I used the koji from the sake brewery, it had a beautiful taste with a sweet taste, but that didn't make it unique, so I tried mixing the two types of koji in various formulations.

    I used Shinnosuke for rice koji. Shinnosuke is less sticky than Koshihikari, so it is easy to make koji, and we were able to make good quality koji.
    Minemura Brewery's amazake, which is easy to drink with sweet taste and yet has a umami flavor, was born.
