If you use grainless amazake, you can enjoy a smooth finish, and if you use grainy amazake, you can enjoy a chewy texture. (Since it contains a small amount of alcohol, if you are concerned about it, please remove the sake lees powder.)

How to make <Amazake berry sauce>

  • Put the amazake (2 tablespoons) and mixed berries in a pot and bring to the boil. (about 4-5 minutes)

How to make <blancmange>

  • Add powdered gelatin and water to a small heat-resistant container and heat in the microwave (600W) for 20 seconds.

  • Put amazake, fresh cream, and sake lees powder in a bowl and mix without foaming.

  • After the heat has been removed, add ① to ② little by little, mix, put in your favorite container, and cool in the refrigerator. (about 3 hours)

  • When it has hardened to your liking, pour amazake berry sauce over it and garnish with mint if desired.
    (The amount of gelatin and cooling time are kept to the minimum to create a melting texture.)

FAQ

If I don't have strawberries, can I use other fruits instead?
Yes, you can substitute seasonal fruit if you like. Kiwis, bananas, and blueberries are also colorful and fun to look at.
