Yasaka Cooperative Farm started in 1972 in Yasaka Village in the mountains of Shimane Prefecture as a work camp activity aimed at the production and sale of pesticide-free agricultural products and the revival of depopulated villages.
Yasaka Village is a place where forests such as oaks, sawtooth oaks, and zelkova spread, surrounded by mountain streams where water wasabi grows thick and yamame trout live. In such a land, we are cultivating fellows who aspire to organic farming and agricultural processing, focusing on agricultural processing centered on miso manufacturing as a job that can be done even in heavy snow in winter.
Organically grown rice and rice koji are fermented overnight to create an amazake with a nostalgic natural sweetness.
