③Flavor Amazake
It is made by adding fruit juice, soybean flour, and black sesame to rice malt amazake. It is popular because it comes in a variety of flavors and in a good way it does not look like amazake. There is a straight type and a concentrated type, and in the case of the concentrated type, if you mix it with milk or soy milk, it will be like a latte, so it is recommended for snacks. Some of them have unusual flavors, and they make great gifts.
④Amazake with lactic acid bacteria
Literally, amazake with lactic acid bacteria. Our popular product, Shirakami Sasara, is amazake made with lactic acid bacteria. The combination of lactic acid bacteria adds just the right amount of sourness to create a refreshing yogurt-like taste, making it easy to drink even for those who don't like the sweetness of amazake. ・Red koji amazake
It is an amazake made from rice koji using red koji mold called red koji. It has been used as a herbal medicine in China since ancient times, and we only sell Shioya Beni Koji Amazake.
・Black amazake
It is sweet sake made from rice koji using black koji mold called black koji. Since citric acid is generated during the decomposition activity of koji mold, amazake with a sour taste is finished. It is also used in the production of shochu. The black amazake sold at our store is from Chuko Sake Brewery, which uses a unique technique to remove the original black color of the black koji rice, resulting in a white amazake.
・Ancient rice amazake
Amazake made with ancient rice. There are black rice and red rice, and it is finished in a reddish-black color due to the pigment. Compared to white rice, it contains a lot of dietary fiber and nutrients like brown rice.
