Column: Mycofascist Day | Amazake Specialty Store Ren MURO Muro [Official Mail Order]

Hello. This is Ren MURO , a store specializing in rice koji amazake.

Today, I would like to talk about a little column.

Do you know what day May 15th is today?

In fact, it seems that it is ′ ′ mycophagist day ′′ A mycophagist is a person who actively tries to eat mushrooms and other fungi, as well as processed foods such as natto, miso, and yogurt that use the fermentation action of fungi. It was named after calling a vegetarian a vegetarian.

Amazake is also a good companion because it is a processed food that uses the fermentation action of fungi.

By the way, why May 15th?

It seems that the origin is a pun that combines May = English, reading May in Roman letters (mai) and reading 15th (Igo). Established in 2009 by the Japan Mushroom Meister Association based in Nakano City, Nagano Prefecture. Punning is very Japanese, isn't it?

Originally, it was established with the aim of promoting the mushroom industry and helping many people to become healthy by eating mushrooms. The scope of anniversaries is broad.

Well, it's the anniversary of fungi and fermented foods, so I thought of a recipe that would be perfect for such a day.

Mushroom sweet rice malt (for 2 or 3 people)

Mushrooms of your choice (2 or 3 types are even better) 2 tsp sesame oil, 1.5 tbsp miso, 2 tbsp amazake (concentrated type), 2/3 tbsp sake (enhanced flavor and spread miso) For)

≪How to make≫

1. Chop your favorite mushrooms into appropriate sizes, place them on aluminum foil, and sprinkle sesame oil evenly over the top.

2.Mix the miso, amazake and sake and sprinkle evenly over the mushrooms.

3. Fill the grill with water and bake on low heat for about 5 minutes. Finally, add finely chopped green onions and sesame seeds to your liking.

You can also bake it in a frying pan instead of on the grill.

※The photograph is an image.

It's a parade of mushrooms, miso, amazake, fungi and fermented foods. Feel free to experiment with other ingredients as well.

As I wrote in my previous blog, it's a season where the environment can change a lot and it's easy to get sick.

Thank you very much for reading to the end today.
